One might assume that with a minimum of a twenty-five minute drive to get home, I would be all sorts of organized and have meals planned out, food prepped and ready to just throw in the pan, and PRESTO- ready to eat in ten minutes!! Ha, hahaaha, hahahahaaaa... Apparently I failed the part in home-ec in school where our crazy teacher taught us how to write a menu and pre-plan your meals. In the twelve years I have been married, there has been approximately 45.773 meals pre-planned. I try to have an idea, but I work so well under pressure...
Enough about my issues. I generally dislike food blogs, because the authors always put the recipe at the bottom of a rambling post... kind of like this one... BUT, I was rather proud of myself tonight and thought I would share my "no-recipe" recipe for my own version of a Dorito casserole. I am not a casserole person, but this turned out pretty freaking "duhlishus" as my two year old would say. Please forgive the amateur food photo- I like to cook, and love photography; I just suck at pairing the two together! And no, I don't get paid by Doritos to use their chips; use whatever tortilla-type chips you have!! If you try this, let me know what you think. Please share too!
2 pounds ground beef, browned
2 tablespoons Taco Seasoning
1 cup Ketchup, Salsa, or tomato sauce
2 cups cooked white rice
1 can sweet corn
1 cup sour cream
2 tablespoons Ranch dressing mix
1 tablespoon Taco seasoning mix
2 cups shredded cheese (fiesta mix, cheddar, whatever you have)
Crushed Doritos or Tortilla chips
